    Is it safe to change a custom field name within a Dyanmic App?
         Will it leave all existing values in Enterprise-wide Projects as-is and simply revise the reference name?
         Will the change apply to references in all Projects currently using that App?

    Changing the field name will just change the label.  All data will stay the same.  Now, if you delete the field to create a new field, you will lose the data.

    If you change the field name, it will be changed for all instances of the DA.
